Yakhni Pulao

A delicately flavored rice dish prepared with aromatic yakhni (stock), tender meat, and whole spices. Light yet flavorful, it's a comforting classic perfect for any occasion.

Method

  1. Prepare the yakhni by simmering the meat with whole spices until tender, then strain the stock.

  2. Wash and soak the basmati rice for 30 minutes before draining.

  3. Heat oil or ghee and fry the onions until golden brown.

  4. Add ginger-garlic paste and sauté until fragrant.

  5. Add the cooked meat and cook for 2–3 minutes.

  6. Pour in the prepared yakhni and bring it to a gentle boil.

  7. Add the soaked rice and season with salt.

  8. Cook until most of the liquid has been absorbed.

  9. Cover the pot tightly and cook on low heat (dum) for 15–20 minutes.

  10. Gently fluff the rice with a fork.

  11. Garnish with fried onions, coriander, and green chillies.

  12. Serve hot with yogurt, salad, or pickle.
