Chicken Karahi

A classic Pakistani favorite featuring tender chicken cooked in tomatoes, green chillies, and freshly ground spices. Simple, aromatic, and bursting with authentic roadside flavor.

Method

  1. Heat oil in a karahi or deep pan.

  2. Add chicken and cook until lightly browned.

  3. Stir in ginger-garlic paste and sauté for 2 minutes.

  4. Add tomatoes, red chilli powder, cumin powder, coriander powder, crushed coriander seeds, black pepper, and salt.

  5. Cook over medium heat until the tomatoes soften and the oil separates.

  6. Add green chillies and continue cooking until the chicken becomes tender.

  7. Sprinkle garam masala and simmer for 5 minutes.

  8. Garnish with fresh coriander and ginger.

  9. Serve hot with naan or tandoori roti.

Chef Tips

  • Use ripe tomatoes instead of tomato puree for authentic karahi flavor.
  • Finish with freshly crushed black pepper for extra aroma.
